2 Ingredient Berry Instant Ice-Cream

I love making this dessert when berries are in season. It's beautiful, refreshing and very quick to whip up in only a matter of minutes.

 500 g frozen berries (make sure they are really frozen and not half melted)
 2 organic egg whites
 Optional: Drizzle a bit of honey or pure maple syrup on top when serving with a few extra berries, chopped, toasted nuts, seeds and/ or coconut.
Thermomix Method

Add the frozen berries to the thermomix and whiz up on Speed 8 or 9 until they are broken down (you will hear a change in the motor when it's ready). Then scrape the sides down.

Add the butterfly whisk to the bowl along with the egg whites.

Now mix on Speed 3.5-4 for 2-3 minutes. You can see when it is ready as it will triple in size and turn into a soft, fluffy soft-serve type ice-cream.

Serve immediately and with toppings of your choice. It's delicious served with a touch of pure maple syrup drizzled over the top.
