Choc Energy Protein Bar

This is a fantastic snack to give you lots of energy and packed with goodness!
Ingredients
1 Cup quinoa flakes
1/2Cup sunflower seeds
1/2Cup ground chia meal
1/4Cup organic wheat flour or rice flour if you are gluten intolerant
1/2Cup dried apricot halves
1/2Cup almonds
1/2Cup sultanas
1/2Cup fresh or dried dates
1/2Cup coconut flour
1/2tsp ground cinnamon
1 TBS organic cocoa powder
1/3Cup real maple Syrup
1tsp vanilla essence
2 organic free range eggs
(if you were one of the lucky few who got the inca inchi protein powder add 2 TBS to the mixture - for extra protein in the bar) P.S. More inca inchi is on its way.
Method

Preheat the oven to 180C
- Grease a rectangular baking pan with butter
- Place all ingredients except the syrup, vanilla and eggs in a food processor or thermomix and pulse until the mixture is finely chopped
- Add the syrup and eggs and pulse until the mixture is well combined. It will resemble a coarse paste.
- Transfer to the baking pan and spread evenly.
Bake for about 20 minutes. Cut into squares.
