Willie’s is the only ‘bean to bar’ chocolate manufacturer in the UK. Using a combination of antique and modern machinery, they create chocolate in small batches, with obsessive control over quality. Willie’s chocolate contains no added flavourings or additives.
Willie’s sources cacao from all over the globe. None of the estates Willie’s works with use pesticides or fertilisers and some are certified organic. Willie’s uses a number of certified organic ingredients, for example the essences and raisins. Willie’s buys single estate cacao direct from the farmers, roasts them in antique ball roasters and make them into chocolate using just raw cane sugar and natural cocoa butter.
The chocolate is also fairly traded. Bought direct from farmers or co-operatives, Willie’s uses premium beans which are significantly above the Fairtrade minimum price.
Willie’s chocolate is all about flavour. They believe great cacaos are like fine wines, each one with its own stunningly individual flavour born of its specific genetics, soil and climate. One might taste naturally of nuts, another of summer fruits.
