3 Ingredient Pancakes

These are the easiest pancakes to whip up, it doesn't take any more than 10 minutes!

The quantities depend on how much you want to make, mix ingredients together until you reach your desired consistency
 Roughly 1 x grated zucchini
 Roughly 2-4 Tbsp nut butter (almond, cashew, peanut, brazil etc.)
 Roughly 2-3 organic eggs
 Optional Add Ins: Spring onion, herbs, feta or other cheese varieties etc.

Add the grated zucchini, nut butter and eggs to a bowl and mix together. Add seaweed salt and pepper to taste.

Fry the pancake mixture in butter, ghee or coconut oil in batches

Serve them plain or with sauerkraut, homemade yoghurt or pesto, avocado, fried eggs, tomato and mushrooms. The choice is yours!
