hi would coconut oil work? or it has to be coconut butter? and is butter the same as cocao wafers????
Hi Kirsty, so coconut oil is different to coconut butter. I’m not 100% sure if it would be a direct substitute without trialling the recipe again myself. And also cocao wafers are different again to coconut oil and coconut butter. If you wanted to make this recipe today then I would suggest playing around with increasing the peanut butter amount, using a bit of coconut oil and perhaps a bit of cacao butter too if you have it as this will help it harden/ set.

Coconut oil wouldn’t be a good substitute for coconut butter. Coconut butter is the coconut “meat” that has been processed in a food processor until it turns into a thick and creamy butter – it is very easy to make yourself, you just need dried coconut and some coconut oil and a good processor, it is very thick. You can also get coconut spread made by Banaban – it is the pure organic coconut “meat” that has been slow roasted to caramelize it and is quite delicious – a little bit like peanut butter itself. Cacao wafers are pure chocolate made from the cocoa bean and have no sweetness at all so not the same as coconut butter which comes from coconut.

Although I haven’t tried it yet, you could experiment with swapping the coconut butter for melted cacao butter.
