
Add the chopped apple, 2 cups of water and ginger to a small saucepan. Cook this on a medium heat until the apples are completely cooked through.
Meanwhile, add the gelatin to a mug and stir through 3 Tbsp filtered water, set this aside to bloom and thicken.
When the apples are cooked remove the saucepan from the heat. Take out the ginger pieces and discard or save them for something else.
The water in the saucepan should have evaporated leaving roughly 1/4 cup.
Now add the cooked apple + it's remaining water, lemon juice, apple cider vinegar and sweetener to a blender and blitz to puree. You can pour this through a sieve to remove any apple seeds.
Pour the apple mix back into the saucepan along with the bloomed gelatin. The residual heat from the apple mix should be hot enough to melt the gelatin, stir it through until the gelatin has dissolved.
Taste the mix and adjust if needed.
Pour into a glass jar and place in the fridge to set.
When it's ready, enjoy!

This really delicious, especially when you add 2 cloves & 2 cardamon pods. We have bees so I was able to use our honey in the 1st batch, however in the 2nd batch I used 1 Tblsp Blue Agave syrup & that is also yummy, perhaps little smoother in consistency.
