Apricot Muesli Bars

A healthier take on the usual processed, sugar laden muesli bars. This muesli bar is made up of 100% real foods.

 1 cup apricots – preservative free (must contain just apricots)
 Pinch of Changing Habits Seaweed Salt
 2 tsp vanilla essence or powder
 3 tbsp coconut oil
 2 cups muesli - no nasties
 1 tsp powdered ginger

Place all ingredients into a food processor or thermomix bowl, and blitz together on medium to high speed until combined - this can take just a few seconds!


Line a small slice tray or container with baking paper (We used a loaf tin).


Add the mixture to the lined container and use your fingers to press the mixture down until well compacted. Place in freezer until firm and can be sliced.


Slice the muesli bars to your desired size, you can slice into triangles or squares too.


Store in an air tight container in the fridge or freezer.
