Bacon Quiche with Hidden Veggies

Quiches are not only delicious, quick and easy to whip up, but also a great way to sneak in some more veggies into your unsuspecting kids and partners.
You can get really creative with quiche and its a great meal to create at the end of the week when you have all those random veggies you need to use up.

 10 large eggs or 12 medium sized
 1 onion , diced or 2-3 spring onions, chopped
 4 large leaves of silver beet, finely chopped
 2 cups baby spinach leaves
 Fresh herbs of your choice (coriander, parsley, thyme, rosemary, sage)
 1 zucchini, grated
 1 cup grated cheese
 Changing Habits Seaweed Salt to taste
 Pepper to taste
 2 ripe tomatoes, sliced
 6 pieces of bacon (preservative free)
 Optional Add Ins: spices, chilli, grated carrot, garlic etc.

Preheat the oven to 180C and line a round, rectangle or square baking or glass tray/ dish. (Note; the larger the dish the faster and therefore thinner the quiche will cook and the smaller the dish the thicker the quiche and longer it will take to cook).

Get the bacon and place around the sides of your chosen dish evenly.

In a large bowl mix all remaining ingredients together evenly (except for tomatoes).

Pour the mixture into the dish so the bacon surround its all.

Place the sliced tomatoes on top and place in the oven to bake until golden brown. The time will depend on the size of the dish you choose and your oven.

Start at 20 minutes and check every 5 minutes afterwards.

Once ready, remove from the oven and allow to cool slightly.

Slice, and serve warm. Enjoy!
