Add the bloomed gelatin + the 1 cup of water to a small saucepan and heat on low until the gelatin has dissolved.
Remove the saucepan from the heat.
Stir through the remaining ingredients, remove the chunks of ginger and pour into a glass container.
Place in the fridge to set.
Once it's ready, slice into squares and enjoy.

Blueberry, Lime and Ginger Gummies worked fine but overall quite mild in flavour. If I made again I would drop the gelatin to 4 Tbsp as it was VERY firm with 4.5 Tspn. I actually rolled pieces in a mix of cinnamon, some cardamon and a bit of rapadura sugar that I ground to a fine icing sugar consistency. That gave it more flavour (but I love anything with cinnamon and cardamon).
It’s actually delicious if you substitute coconut milk or coconut cream for the water.
