Broccoli Pizza Base with Cultured Coriander & Garlic Sauce

Broccoli Pizza Base Ingredients
 2 organic broccoli heads (small- medium size - roughly 450g raw)
 3 organic eggs
 a pinch of Changing Habits Seaweed Salt
 60g goats cheese
 Cracked Changing Habits Pepper to taste
Pizza Topping
 A handful of pitted black olives
 crumbled goats cheese on top
 1 tbsp dried mixed herbs
 caramelised garlic and onion
 Cultured Coriander & Garlic Sauce, drizzled over the top

Preheat the oven to 180C.


Roughly chop the broccoli into pieces and add to a food processor or thermomix and blitz until it resembles a 'rice' texture.


Steam the broccoli rice until tender and cooked.


Scoop the broccoli into a tea towel or cheesecloth and wring out as much water as possible (it's easier to do this once the broccoli has cooled a bit).


Now mix all the base ingredients together in a bowl until evenly combined.


Place a piece of baking paper onto a flat baking tray and scoop out the mixture onto the baking paper and shape it into a round or rectangle base evenly.


Place in the oven and bake until golden brown roughly 45 minutes.


When the base has been cooked, top it with the topping ingredients (except for the cultured coriander & garlic sauce).


Place back in the oven and cook for 10-15 minutes or until desired.


Remove from the oven and allow to cool slightly. Drizzle the cultured coriander sauce over the top and slice into pizza slices.


Enjoy immediately!
