Cauliflower, Chickpea & Beetroot Soup

This is such a beautifully vibrant tasty soup, perfect for those chilly winter nights.

 1 Small beetroot, diced
 2 Brown onions, diced
 1/2 large cauliflower, roughly chopped
 3-4 cloves of garlic
 3 cups of water
 1 can organic chickpeas (400g)
 Handful of fresh basil
 1-2 tsp Changing Habits Seaweed Salt
 1 tsp cracked Changing Habits Pepper
 1/2 cup coconut cream
 2-3 Tbsp olive or coconut oil
 Optional: Changing Habits Chilli Powder to taste

Add all the oil + onion and garlic to a saucepan and sauté until golden brown.


Add the remaining ingredients into a saucepan and bring to a simmer.


Simmer with the lid on until the beetroot is soft.


Once it's cooked to your liking, use a stick blender to puree the soup until it's completely lump free.


Serve with homemade bread.
