Add all the oil + onion and garlic to a saucepan and sauté until golden brown.
Add the remaining ingredients into a saucepan and bring to a simmer.
Simmer with the lid on until the beetroot is soft.
Once it's cooked to your liking, use a stick blender to puree the soup until it's completely lump free.
Serve with homemade bread.
