I recommend adding lots of herbs to as many savoury dishes as possible as they are not only packed with loads nutrients, minerals and antioxidants, they are also great at aiding the body's natural detoxification processes, and not to mention improve the taste and aroma of so many foods. Both the broth and gelatin are wonderful healing foods for the body as they provide a great source of collagen and protein, supports skin, nail, hair and teeth health, prevents cellulite and stretch marks by tightening and toning the skin, improves digestion, is great for joint health + so much more.

Add all ingredients (except herbs) to a large saucepan and cook on medium heat until the veggies are cooked and soft.
When cooked to your liking, add the mixture to a blender or thermomix and blitz until smooth and creamy. Add the herbs in and blend through again, it should be completely smooth and lump free.
Taste the mixture and adjust if needed. If the soup is too thick add a touch more filtered water and blend until desired.
Pour into bowls and enjoy this gorgeous, nourishing soup.
