Cherry Berry Slice

Cherry Ripe inspired slice, another wonderful taste of summer, cherries, macadamias and coconut and of course chocolate. Yum!

Yields1 Serving
Base Ingredients
 1 cup Macadamias or any nut would work
 3 tbsp coconut oil
 2 tbsp maple syrup or honey
Filling Ingredients
 2 cups shredded coconut
 3 tbsp coconut oil
 1 tsp vanilla essence
 1 cup frozen or fresh pitted cherries
 1/3 cup frozen raspberries
Topping Ingredients
 1 tbsp maple syrup, honey or Changing Habits Rapadura Sugar, depends on your sugar preference and how sweet you like your chocolate. You can omit if you would prefer your chocolate bitter with no sweetener
 1 tbsp coconut oil
Base Directions

Line baking tray with baking paper and set aside (we used a pyrex baking dish that measured 26cm x16cm)

Put nuts into blender, food processor or Thermomix and blend until fine. If you would like your nuts courser in the base do not blend as long.

Place remaining ingredients into blender with nuts and blend until all ingredients are combined.

Press mixture into prepared baking tray and pop into freezer to set.

Filling Directions

In clean blender, food processor or Thermomix add all the filling ingredients and mix until combined.

Remove tray from freezer and put the prepare filling mixture on top of the base and pop back into freezer to set while you make the chocolate topping

Chocolate Top Directions

In a small saucepan on low heat add cacao melts and coconut oil and melt down. Add your desired sweetener if required and stir until combined.

Remove tray from freezer and pour melted chocolate mixture onto frozen cherry layer until level and covers the entire layer. Work quickly as the frozen filling will set the chocolate quite quickly.

Pop tray back into the freezer until the chocolate layer is only just set approx 10mins. We find it easier to cut the slice into desired portion sizes when the chocolate layer has not hardened completely. Once cut pop back into freezer until completely set.

Bring the slice out a few minutes just before your ready to serve it. Keep remaining portions in the freezer until required (if it lasts that long)

    This slice was very easy to make, I will make it again but will soak the shredded coconut for the filling as it was too hard, and I will add extra cherries chopped into the filling before putting it into tray, as the cherries all but disappeared in my Thermomix. The base was fabulous and so was the top layer. Thank you for sharing. ?

      So sorry about the error in this recipe. We’ve recently changed recipe platforms and there were a few errors in the ingredients measurements in some recipes when they were transferred over. I’ve now updated this recipe to show the correct amounts.
