Chia Coconut Porridge

A super quick and nourishing breakfast. Perfect for those chilly Winter mornings.

 4 tbsp chia seeds
 1/2 cup shredded coconut
 1x can (270ml) coconut cream (we used the AYAM brand)
 1 tsp vanilla
 1/2 cup boiling water
 1 tsp lemon juice
 Garnishes; Shredded coconut, toasted nuts or seeds, raspberries, a drizzle of honey or pure maple syrup or chopped Changing Habits Dates, a sprinkle of Changing Habits Ceylon Cinnamon, chopped banana

Add all the ingredients (except garnishes) to a small saucepan and heat on low. Heat for a few minutes or until it starts to thicken up nicely. Continue to stir the mix.


When it's ready (it should be thick and plump), scoop into 2 bowls and garnish them with your preferred garnishes.


Serve and enjoy.
