Cinnamon and Ginger Date Chutney

A delicious condiment to accompany pizza, eggs, cheese and barbecued meats.

 1 small onion, finely chopped
 2 tbsp fresh ginger, finely chopped
 1 1/2 cups filtered water
 1/2 cup organic, unfiltered apple cider vinegar
 Changing Habits Seaweed Salt to taste
 1/2 tsp Changing Habits Ceylon Cinnamon
 2 tbsp lemon rind, grated
 2 cups Changing Habits Dates, chopped into chunks

Place all in a saucepan on medium to high heat and cover with a lid.

Once it begins boiling, remove the lid and allow to simmer on a medium to low heat.

Continue stirring, ensuring the dates are submerged in the liquid so they become soft.

Once all well combined and the dates are fairly soft, taste the mix and ensure it suits your liking.

Remove from the heat, allow to cool slightly and then spoon into a glass jar and store in the fridge.

Optional add ins: chili, coriander, basil, tomato, lemon or orange juice.
