These are a great little snack to have. Cranberry juice is high in Vitamin C, antioxidants and also rich in minerals such as; calcium, magnesium, iron, phosphorous, sodium, potassium and zinc. Cranberry has also been used to fight against UTI's, kidney stones and ulcers, but is also great for respiratory infections, colds, inflammation in the lungs and preventing tooth decay.

Mix the gelatin with 1/2 cup filtered water, set aside to bloom.
Add the bloomed gelatin and hot water to a small saucepan and heat on a low heat until dissolved.
Remove from the heat and allow to cool slightly before mixing in the cranberry juice and honey.
Pour the mixture into moulds and place in the fridge to set.
When ready, pop out of the moulds and store in an air tight container.
