Such a delicious, warming and easy comfort food dish to whip up, this would be perfect for rainy day weather!

Preheat oven to 180C.
Add the potatoes, salt, pepper and melted coconut oil or butter to a bowl and mix together until the potatoes are nicely coated.
Spread out evenly onto a baking tray and place in the oven to roast for 30-35 minutes or until golden brown and starting to become crispy.
Take the chips out of the oven and sprinkle the spring onion over the top and the parmesan cheese (generously), then return to the oven to roast for another 5-10 minutes.
When it's ready, remove from the oven and serve immediately.
Optional: Serve with homemade chilli sauce and sour cream, aioli, homemade pesto or a yoghurt dip mixed with herbs and lemon.
