
Preheat the oven to 180C. Line a muffin tray with paper cups.
Add the eggs, spinach, herbs, salt, pepper, oil, garlic, bacon pieces, cheese (if adding it) and mix together.
Pour the mixture into the pre-prepared cups and if choosing to add the tomato slices, place them on top.
Place them in the oven and bake for 25-30 minutes or until golden brown and cooked through.
Remove from the oven and allow to cool until warm.
Serve warm with some avocado on top, or plain.

Very easy to make and delicious too! My 3 and 6 year olds gobbled them up and asked for more!
How much coconut oil is needed?
