Preheat the oven to 180C. Grease and line a bread loaf tin.
Add all the ingredients (starting with 1/4 cup sugar) to a food processor and blitz to combine.
Taste the mixture and adjust the sweetness if needed.
Scoop the mixture into the pre-prepared tin and spread it out evenly. Place it in the oven and bake for 50-55 minutes, or until cooked through.
Remove it from the oven and allow it to cool in the tin for 10-15 minutes. Then remove it and allow it to cool until it's warm on a wire rack.
Serve warm, as it is, or with a little nut butter on top.
