Easy Olive Oil Mayo

 1 cup cold pressed olive oil (we used a mild olive oil so it wouldn't be too overpowering)
 2 organic egg yolks (room temperature)
 A pinch of Changing Habits Seaweed Salt
 2-4 Tbsp filtered water
 Lemon juice to taste
 Optional: mustard seeds or powder to taste

Add the egg yolks, lemon juice and mustard (if adding it in) to your thermomix bowl or food processor. Start by very slowly drizzling the oil in while the ingredients in the bowl are churning on a low speed. Keep drizzling the oil in slowly until a beautiful thick mayonnaise has formed. If it goes too thick, start drizzling in some of the water until you reach your desired consistency.


Taste the mixture and adjust the flavour if needed, add more salt, lemon juice or mustard if desired.


Store in a small glass jar in the fridge.
