A really easy and delicious gluten-free muesli option.
Preheat the oven to 170C.
Mix together the seeds, coconut, buckwheat, cinnamon, nuts, salt, vanilla and coconut oil together in a bowl until everything is evenly combined.
Spread the mixture out evenly onto a baking tray and place in the oven to roast until golden brown, roughly 15 minutes.
Remove from the oven and allow it to cool completely.
Then mix through the rest of the ingredients and pour the mixture into a clean glass jar to store it in.
Serve with yoghurt, coconut yoghurt, berries and/ or other fresh fruits.
