Super simply and super yummy, you can't go wrong with these pancakes on a Saturday or Sunday morning!
Mix dry ingredients together in a bowl.
Mix wet ingredients together in a separate bowl until well combined.
Preheat a frying pan on a low-medium heat.
Now mix together the dry and wet ingredients and combine evenly.
Add some butter or coconut oil to the frying pan and allow it to melt and coat the pan entirely.
Do a test pancake (it's usually the first one is not very good) but it's good to see if the pancake will hold together nicely, if it's too runny just stir though a touch more flour into the original mix until you get the perfect consistency.
Now add more butter or coconut oil to the frying pan if needed and cook 2-3 pancakes at a time if your frying pan is large enough, cook on each side until golden, then remove and place onto a plate.
Continue cooking the mix until it has completely been used up and add butter or coconut oil in between when needed.
When serving drizzle with a touch more honey, perhaps some fruit and yoghurt too.
