GF Sweet Potato Brownies

A delicious chocolate brownie with a sneaky veggie hiding in there, it's a win-win!

 1 1/2 cups cooked/ mashed sweet potato (or roughly 1 medium-large in size)
 2 eggs
 1/2 cup coconut oil
 15-20 Changing Habits Dates, chopped
 2 tsp vanilla essence
 1 cup Changing Habits Cacao Melts, melted or 1 cup Changing Habits Cacao Powder
 1 tsp baking powder
 1 tsp baking soda
 2-3 tsp apple cider vinegar
 2 1/2 tbsp coconut flour
 A pinch of Changing Habits Seaweed Salt

Preheat the oven to 180C. Grease and line a slice tin.


Add all the ingredients into a bowl and mix together until evenly combined.


Pour the mixture into the pre-prepared tin and spread it out evenly.


Place it in the oven and bake it for 40-45 minutes, or until cooked through.


Remove it from the oven and allow it to cool, you can transfer it to a wire rack after 15 minutes.


Place it in the fridge or serve warm with cream and berries.
