This gluten-free recipe is sure to please even the most traditional of Anzac biscuit lovers! They are beautifully chewy and incredibly morish!

Gluten free Anzac biscuit recipe

Yields12 Servings

 1/3 cup coconut flour
 1/4 cup almond meal (we used blanched almond meal)
 125-140g softened, unsalted butter
 2 Tbsp water
 1 tsp baking soda
 1 cup gluten free rolled oats
 1-2 tsp vanilla essence

Preheat the oven to 170C. Line a large baking tray with baking paper.

Add the coconut flour, oats, baking powder, cinnamon, sugar, almond meal and shredded coconut to a bowl and combine evenly.

Now add in the 125g of softened (it can be slightly melted too) butter and water to the dry mix and combine evenly or until the mixture comes together.

If the mixture is still too crumbly, add in a little bit more butter and mix again until the mixture comes together easily when it's pressed in between your hands.

Begin to gently roll the mixture into balls/ biscuits and place them on the baking tray. You should get between 10-12 biscuits depending on the size you make them.

Place them in the oven and bake until golden brown, roughly 13-15 minutes.

When they're ready, remove them from the oven and cool. Enjoy.
