Preheat the oven to 160C.
Add the chopped apples, coconut oil, cinnamon and rapadura sugar to a small bowl and mix to combine everything evenly.
Place the apple mixture into a small-medium sized oven proof dish.
Place in the oven and cook for 15-20 minutes, or until the apples are soft and cooked through and the sugar has begun to caramelise.
Remove the mixture from the oven.
Add the blueberries to the apple mix and stir through.
Scoop the apple mixture into bowls or ramekin dishes and top with the muesli.
Optional: serve with homemade ice-cream, custard or yoghurt if desired.
