A really delicious paleo take on a popular carrot cake.

Preheat the oven to 180C.
Grate the carrots and add to a large bowl.
Add the rest of the ingredients (starting with 1/2 cup Rapadura sugar) and mix together until evenly combined.
Taste the mixture and add more sugar if your taste buds need it.
Line a cake, spring form or loaf tin with baking paper.
Pour the mixture into the pre-prepared tin and place in the oven and bake for 1 hour until golden brown.
Meanwhile prepare the icing.
Add all the icing ingredients to a really high powered blender, thermomix or food processor and blend really well until almost smooth (we left it a little chunky for some beautiful texture).
When then cake is ready, remove from the oven and allow it to cool to room temperature.
Pour the icing over the cake and use a knife or a spatula to spread it out evenly.
Sprinkle the lime zest over the top.
Slice into pieces and enjoy with a cup of tea or coffee immediately!!!

Hi Kerryn. Yes, that would be quite an expensive cake! Sorry for the confusion…we recently switched to a new recipe platform and some of the quantities were distorted. All fixed now 🙂
