Paleo Shepherd’s Pie

A hearty meal that everyone will love. It is also nut free, so your kids can take it to school.

Base Ingredients
 1 1/4 cup organic sunflower seeds (or you can use nuts)
 2 eggs
 1/4 cup ghee
 1/2 tsp Changing Habits Seaweed Salt
Pumpkin Topping Ingredients
 1/2 pumpkin (skinned and chopped)
 1/2 -1 tsp Changing Habits Nutmeg
 1/2 tsp Changing Habits Ceylon Cinnamon
 Pinch Changing Habits Seaweed Salt
 1 Tbsp ghee
Filling Ingredients
 1 large onion
 400g organic mince (Lamb, beef, turkey or chicken)
 1 carrot
 1 zucchini
 1 spring onion stick
 2 Tbsp Changing Habits Coconut Oil or ghee
 1 tsp Changing Habits Seaweed Salt
 1 tsp Changing Habits Dulse Flakes
 1 tsp Changing Habits Turmeric Powder
 1 tsp Changing Habits Garam Masala
 1/2 tsp Changing Habits Ceylon Cinnamon
 1 Tbsp organic raw honey
 1/2 tsp fresh pepper

Blitz salt and nuts or seeds together in thermomix or food processor until the nuts are broken down into a finer texture. Blitz in eggs and ghee until well combined.

The mixture maybe a little wet/sloppy, but it will be fine once cooked. Grease a glass baking dish with Changing habits Coconut Oil and add this mixture to the dish, spread evenly and cook until golden.

Cook the pumpkin in a saucepan with a little water until very soft. Meanwhile prepare the mince filling.

Add onion, spring onion, carrot, zucchini, salt, dulse flakes, spices and pepper to thermomix or food

processor and blend until blitzed into smaller texture.

Add coconut oil or ghee to a frying pan, then add this vegetable mixture. Once almost cooked, add the mince and fry until the mince is 3/4 cooked through.

Meanwhile, clean out the thermomix or food processor and add the pumpkin, nutmeg, salt, dulse flakes, cinnamon and ghee and blitz until thick and creamy.

Once the Base is cooked and looks golden, add the mince mixture on top, then top the mince mixture with pumpkin puree and cook for another 15-20 minutes.

Once this is ready, serve with a fresh salad, veggies or eat alone.
