This is a really easy and yummy peanut satay sauce to whip up. You don't have to stick to just chicken, you could also try prawns, chunks of fish, veggies or drizzle the sauce on top of lettuce wraps for something a little different.

 500g organic chicken thigh, cut into squares
 2 Tbsp Tamari or coconut aminos
 1 Tbsp lemon juice
 1/2 tsp pepper
 1 tsp paprika
 1-2 cloves of garlic, crushed
 1/2 tsp ginger powder
 1/2 cup organic crunchy peanut butter
 1/4 - 1/2 cup coconut cream
 Wooden Skewers

Add the skewers into a container and soak them in warm water.

Preheat the oven to 170C. Line a baking tray with baking paper.

Add all the ingredients (except the chicken) to a bowl and mix to combine. Start off with 1/4 cup of coconut cream, keeping adding small amounts as needed.

Add 3/4 of peanut satay mixture to another bowl along with the chicken. Coat the chicken pieces evenly. Allow the chicken to marinade for at least 1 hour.

When the chicken is ready, drain the water from the skewers. Begin to put the chicken pieces onto the skewers. Place each skewer onto the lined baking tray, evenly spaced apart.

Drizzle any of the leftover peanut satay marinade on top of the chicken skewers. Place in the oven and bake for 12-15 minutes, or until golden brown and cooked through.

When they're ready, serve the leftover peanut satay sauce on the side along with a wedge of lime.
