Pecan Cinnamon Spiced Fruit Cake

A beautiful christmas cake that is super quick and easy to whip up. The beautiful fragrant spices just waft through the whole house when cooking, it smells absolutely delicious!

 3 1/2 cups Mixed dried fruit (oil and preservative free) I used, cherries, raisons, Changing Habits dates, figs, apricots, currants, goji berries and cranberries.
 3 tsp Changing Habits Cinnamon
 1/2 tsp Changing Habits Nutmeg
 2 tbsp vanilla essence
 Zest and Juice of 1 orange
 1/3 cup Coconut Oil
  1/2 tsp Changing Habits Seaweed Salt
 5 organic eggs
 1 cup almond meal
  1/4 cupChanging Habits Rapadura Sugar
 3/4 cup Changing Habits Emmer Wheat Flour sifted
 1 cup mixed nuts (i used almonds, brazil and pecans + extra pecans for garnishing the top)
 Optional Add Ins: ginger, turmeric, all spice, Changing Habits Cacao Melts, espresso shots to taste etc.

Preheat the oven to 170C. Grease and line a spring form cake tin.

Mix all ingredients together in a bowl until combined.

Pour into the cake tin and top with the pecans decoratively.

Cover the top with alfoil and bake for 40 minutes.

Remove the alfoil from the top of the cake and bake for a further 15-20 minutes or until cooked through yet still moist.

Remove from the oven and allow to cool.
