Raspberry and lemon gummies

Yummy, gut-loving gummies - so easy and fun to make! You can adjust the amount of honey depending on your taste.

 1 cup frozen raspberries, thawed
 1/3 cup lemon juice
 3 tbsp honey
 3 tbsp Changing Habits Gelatin
 Filtered water (enough to just cover the gelatin to bloom)

In a glass, combine the gelatin and water and set aside to bloom (for about 10 minutes).

Blend the thawed raspberries and lemon juice together in a food processor or blender.

Pour mixture through a sieve into a bowl, pushing with the back of a spoon to remove excess seeds.

Place the lemon and raspberry mixture into a pan on a medium heat until it starts to bubble. Remove from heat and set aside to cool for 1 minute.

Mix the bloomed gelatin and honey in with the raspberry mixture and return to a low heat, stirring until the gelatin has dissolved. Set aside to cool for 5 minutes.

Using a teaspoon, spoon the mixture into the moulds and place in the refrigerator to set for 30+ minutes.
