Add all filling ingredients to a food processor and blitz to combine.
Press the mixture into a lined container evenly. Then place in the freezer to set.
Add all the choc top ingredients to a small saucepan and allow it to melt together until combined.
Pour the mixture on top of the shredded coconut mix, and place in the fridge or freezer until set.
When it's ready, slice into squares or rectangles and enjoy!

I am currently making the Probiotic Bounty Bites from the cookbook and find that the filling is not binding together although it has been in the freezer (I used coconut kefir + tablespoon of coconut cream in the filling). I am going to blitz the ingredients in the Thermomix and hoping that will make a difference. Any suggestions anyone?

Hi Ann,
You could try lining a loaf tin with baking paper then pressing the coconut filling into it. Place it in the freezer to completely set. Then you can slice it into bars and cover it in melted chocolate.
