Do you need extra sneaky ideas, yet incredibly delicious recipes that can hide lots of beautiful greens in them? This recipe, although a dessert, is still made from real, wholefoods and is quite nutrient dense with the addition of the beautiful coconut, avocado, greens powder and limes.

Yields1 ServingDifficultyBeginner
Base Ingredients
1 1/2 cup almonds (or try sunflower seeds if nut free)
11 Changing Habits Dates soaked in warm water until soft and drained
Filling Ingredients
4 large limes, zested and juiced
2 cashews, soaked in water overnight, rinsed and drained
1 cup coconut cream (preservative free)
 1/4 cup coconut oil
 1/3 cup raw honey
 12 ripe avocadoes
Optional: 2-4 cups baby spinach leaves (to sneak even more greens into your diet) This will make it a more vibrant green colour too!
1

Add all base ingredients to a food processor and blitz until well combined and the mixture starts clumping together.

2

Press the base into a lined spring form tin evenly, then place in the freezer to set while you begin your filling.

3

Add all of your chosen filling ingredients to a high quality food processor or blender and blend until smooth and creamy. You may need to scrape down the sides a couple of times. Taste the mixture and adjust if needed.

4

Pour the filling over the base and pop back in the freezer until set.

5

When ready, remove from the freezer and allow it to thaw slightly, then warm up a knife with hot water from the tap so it will glide right through the still slightly frozen cheesecake. Enjoy and savour every single bite!
