Roasted Chicken in our Changing Habits Spice Rub Mix

If you love easy, nourishing and quick roast chicken recipes, then you'll love this one!

Spice Rub ingredients
  1 tsp cardamom
 1/2 tsp cayenne pepper
  3 tsp grated ginger
 3 tsp grated garlic
Other ingredients needed
 1 medium organic, free-range chicken
 2-3 onions, quartered
 coconut oil (enough to coat the chicken and onions)

Preheat the oven to 180°C

Mix the freshly grated garlic and ginger together in a small bowl.

Mix all dry spice rub ingredients together in a small bowl.

Place the chicken (room temp is best) into a roasting tray. Add the onions to the tray so they surround the chicken.

Pour/ sprinkle the coconut oil over the top of the chicken and onions so everything is coated nicely (but not drowning in oil).

Rub the garlic and ginger all over the chicken using a spoon or your clean fingers.

Use a tea strainer and sprinkle the spice rub mix evenly over the whole chicken (both sides).

Place in the oven and roast for roughly 1 hour or until golden and crispy.

When ready remove from the oven and allow the chicken to rest for 15 Minutes to 20 Minutes

    This is a fantastic recipe, I’m making it for the 2nd time tonight. We pulled it apart and dressed in all the juices… served with a bit tray of roast veggies( whatever’s left in the fridge) yummie! :))
