Want to make healthy marshmallows that are naturally dyed with strawberries? Then you have to try this recipe!

Line an 8 x 8 baking dish with baking paper and grease with a small amount of coconut oil.
Sprinkle the shredded coconut or cinnamon on the parchment paper and spread evenly (this will be the coating for the marshmallows). This is optional.
Mix half cup of the water with the gelatin and mix well, set aside and allow to bloom.
Pour the remaining ½ cup of water in a small pot and combine with honey, vanilla, berries and salt. When the gelatin has bloomed add it to the honey mixture and allow the mixture to melt together on a low- medium heat until the gelatin has dissolved. The mixture should have a slightly pink tinge from the juice of the berries leaching into the liquid.
Once finished remove the berries, then immediately but SLOWLY combine the gelatin and honey mixture into a bowl with mixer on highest setting.
Mix on high until the color lightens and the mixture becomes light and fluffy and sticks to the beaters (this may take up to 10 minutes).
Pour mixture into your prepared dish and poke the strawberry slices into the marshmallow.
Place in the fridge and let cool for 1 to 4 hours depending on how firm you want the marshmallows (less time = less firm).
