Sweet Summer Mango Avocado Salsa

Two of my most favourite foods are mango and avocado. I just love this time of year as both of them are readily available in my local fruit and vegetable shop. This recipe is a different slant on the usual guacamole, enjoy.

 4 ripe avocados, peeled, de-seeded and chopped into small cubes
 4 limes juiced
 Zest of 2 limes
 2 green chillies, chopped
 4 Tbsp coriander, chopped
 2 Tbsp of red onion, chopped finely
 1 mango, diced

Mix chopped onion and 1/2 of the lime juice in a small bowl. Let the onion soak for no less than 1 hour. When ready, discard the lime juice.

You can either add all remaining ingredients to a food processor and blitz until smooth and creamy or alternately if you want a chunkier dip, just mix all ingredients together in a bowl.

Serve cold or at room temperature with sticks of carrot, red pepper, celery, cucumber, apples and snow peas.

      We discarded it simply so the salsa wasn’t too tangy, however you can also leave it in if you wish! We sometimes do as well.
