
Add the coconut oil or butter to a large saucepan on a medium heat and allow it to melt.
Add the onion and fry until fragrant and lightly golden brown.
Add the garlic, turmeric, salt, pepper and chicken and fry until the chicken has been sealed and is a light golden colour too.
Add the remaining ingredients and bring to a soft simmer. Simmer until the chicken is cooked through.
Taste the mixture and adjust any of the flavours if needed.
Pour into bowls, garnish with some coriander leaves and enjoy.

When do you use the coriander root. Hoping it step 3?
Hi Sarah, you add it in when it says ‘Add the remaining ingredients in’ which is Step 4. You can also add it in Step 3 if you like to lightly saute the coriander root adding more depth of flavour 🙂
Can you freeze this if made in bulk?
