
Strain the water from the cashews and give them a good rinse.
Add the mangoes, turmeric, soaked cashews, coconut oil, sweetener to taste (if desired), 1 cup coconut milk/ cream to a blender or thermomix and blitz until super creamy and smooth.
Keep add more coconut cream/ milk if the mixture isn't blending well enough (but the mixture should be beautiful and thick).
Optional: sprinkle extra diced mango on top for garnishing.
Pour into a lined container or bread loaf tin and place in the freezer to set. Alternatively you can pour into ice-block moulds.
When ready, allow to thaw for 10 minutes and slice into squares, triangles or bars and enjoy.
