Mix all of your chosen ingredients together (except coconut oil) until evenly combined. If the mixture is too wet add a touch more flour until you reach the right consistency.
Heat a large frying pan with some of the coconut oil.
Once the pan is heated, using a spoon, scoop out the fritter mixture and place in the fry pan and flatten a little. Place as many as you want in the fry pan, making sure the edges don't touch.
Cook the fritters until golden brown on each side.
Remove the fritters and place onto a plate.
Add more coconut oil as needed and continue cooking the fritters until all the mixture has been used up.
Serve and enjoy.
