A healthy alternative to a white chocolate Christmas bark. Plant-based, refined sugar free, gluten-free - makes it the perfect guilt-free treat this Christmas!

Ingredients
 1/3 cup cranberries
 1/4 cup pistachio kernels
 1/3 cup coconut flakes lightly roasted
 1 tsp coconut oil
 2 tbsp coconut butter
 1 tbsp tahini
 2 tbsp maple syrup
 1 tbsp cacao butter
 2 tbsp coconut cream
 2 tsp vanilla essence
 pinch Changing Habits Seaweed Salt

Spread the cranberries, pistachios and coconut flakes in a lined loaf tin.

Heat a pot over a low heat and add the coconut oil.

When the coconut oil has melted, add the coconut butter, tahini, maple syrup, cacao butter and coconut cream. Stir continuously until completely melted.

Remove from the heat and stir through the vanilla and salt.

Spoon the mixture evenly over the cranberries, pistachios and coconut flakes. Press down with the back of a spoon and place in the freezer to set.

Cut into small pieces and store in the refrigerator.
