A delicious and versatile recipe, you can mix it up a bit by adding in any of your favourite herbs or spices, grated cheese or leftover roasted meat or diced (chemical-free) bacon.

Preheat oven to 180C.
Add all the ingredients into a bowl and combine together.
Line a muffin tray with paper cups, or grease the tray with olive or coconut oil.
Add the mixture into the muffin cups so they are 3/4 full.
Place in the oven and bake for 30-35 minutes, or until golden brown and cooked through.
Remove from the oven and allow them to cool on a wire rack.
Store in an air tight container in the fridge.
