Apple, Oat and Sultana Muffins

These muffins are a great school lunch box, mid-morning or afternoon snack. Full of fibre!

 3 small apples washed and grated
 1 cup rolled oats
 1/2 cup of natural sultanas without oil
 1 1/2 cups of Changing Habits Emmer Wheat Flour
 1 tsp baking powder
 1/4 cup of Changing Habits Rapadura Sugar
 1 tsp Changing Habits Seaweed Salt
 2 eggs
 1 cup milk (add more if needed)
 1/4 cup melted butter or coconut oil

Mix all the dry ingredients including sultanas.

Mix all the wet ingredients.

Combine wet and dry until just mixed.

Add the grated apple and mix until combined.

Place the mixture into greased muffin trays and cook at 180C for 20-30 minutes or until golden on top.

Serve warm along with homemade ice-cream, yoghurt, kefir, whipped cream or seasonal fruit.
