Chicken Curry Soup

 1 Organic whole chicken
 1 1/2 tbsp Changing Habits Curry Powder
 2 tbsp Changing Habits Beef Broth, or just chicken broth as the water if you have it
 1 tbsp Changing Habits Organic Vegetable Stock
 1 tbsp Apple cider vinegar
 1 l water or chicken broth
 1 onion, diced
 400 ml coconut cream
 3 kafir lime leaves
 2 sticks of lemongrass, crushed
 1 head of broccoli, chopped into florets
 200 g green beans, topped and tailed
 3 zucchinis, chopped

Add all the ingredients (except the broccoli and zucchini) to your slow cooker.


Cook on low for 3 hours.


After the 3 hours, add the broccoli and zucchini and cook for another hour, or until the veggies are cooked and the chicken is soft and tender.


When it's ready, taste and add more salt to taste if needed.


Serve and enjoy.
