Eggplant – grilled and flavoursome!

The quickest, tastiest, real food snack or entree!

 1 eggplant
 2 tsp (at least) Changing Habits Turmeric
 Changing Habits Pepper and Changing Habits Seaweed Salt to taste
 2-3 tbsp (at least) coconut oil

Slice an eggplant thinly.

Heat up a pan smothered in Changing Habits Coconut Oil

Add the thinly sliced eggplant and ensure the coconut oil reaches all parts of the eggplant.

Sprinkle salt, pepper and tumeric on the eggplant slices, and flip on the other side and do the same.

Wait until the eggplant goes slightly brown as per the photo.

Suggested Serving: Great alone or in a salad. Place quality fetta and herbs in the middle, role them up, and put a toothpick in to ensure they stay secure. These are a delicious extra to a meal, tapas, or simply for your own enjoyment.
