Lemon, Basil and Chicken ‘Faux’ Fried Rice

A grain free, low carb fried rice recipe. No problem we have your meal covered with this delicious fried rice alternative.

 1 medium sized cauliflower, roughly chopped
 1 medium sized broccoli head, roughly chopped
 1 onion, roughly chopped
 4 garlic cloves
 Juice of 1 large lemon + extra for serving
 2 tsp of Changing Habits Turmeric Powder
 2-4 Tbsp Coconut Amino’s
 1/2 tsp cracked Changing Habits Pepper
 Changing Habits Seaweed Salt to taste
 Leftover roast chicken, shredded (enough for 4 people)
 A generous amount of coconut oil for cooking
 A large handful of fresh basil
 1 cup of spinach leaves

Add the onion, garlic, broccoli and cauliflower to a food processor or thermomix and blitz until it looks like this. You may need to do this in 2-3 batches.

Heat a large frying pan on medium to high heat.

Add the coconut oil and add half the broccoli/ cauliflower mixture to the pan. Cook until desired, I like mine with a bit of crunch, yet slightly golden.

Remove from the pan and scoop into a large dish.

Add some more coconut oil the same pan and cook the rest of the broccoli/ cauliflower mix until desired.

Now add the turmeric, shredded chicken, coconut amino’s and stir through coating everything.

Add the basil and spinach and stir through, allowing it to wilt.

Now mix through the other half of the cooked cauliflower and broccoli mix coating everything evenly.

Taste the mixture and adjust if needed by adding more lemon juice, basil, coconut amino’s, salt of pepper or whatever you desire.

When ready, serve up and enjoy!
