Cauliflower Bites with a Blue Cheese Dipping Sauce

A delicious combination of crunchy cauliflower bites and creamy blue cheese sauce. If you don't have an air-fryer, these can be cooked in the oven on 200 degrees Celsius for 15-20 minutes or until golden & crunchy!

Ingredients
Cauliflower Bites
 1 Lge head of cauliflower cut into small florets
 2 tbsp ghee melted
 2 eggs
 1 cup almond meal
 1 tbsp Changing Habits Vegetable Stock Powder
 1 tbsp paprika
 1 cup finely grated parmesan
 cracked Changing Habits Pepper to taste
 Changing Habits Seaweed Salt to taste
Blue cheese dipping sauce
 1/2 cup sour cream
 1/3 cup creamy blue cheese (Castello blue cheese is great for this recipe)
 cracked Changing Habits Pepper to taste
 Changing Habits Seaweed Salt to taste
Directions
Cauliflower bites

Preheat air-fryer to 200 degrees Celsius.

Cut the Cauliflower into small florets, all stalks removed. Set aside.

In a small bowl combine the cooled, melted ghee and eggs.

In a separate bowl add the almond meal, vegetable stock, paprika, parmesan and salt and pepper. Mix well.

Coat the cauliflower bites one by one in the egg/ghee mixture and then the almond meal mixture. Set aside.
Repeat with the rest of the pieces of cauliflower.

Heat in the air-fryer for 10 minutes or until golden and crispy.

Blue Cheese Sauce

Heat the sour cream in a pot over a medium heat, once the sour cream has melted add the blue cheese and stir through, until it becomes a sauce-like consistency and then remove from the heat. Season with salt and pepper.

Pour the sauce into a small serving bowl with the cauliflower bites on a platter. Enjoy!
