A lovely dairy free, gluten free and refined sugar free Carrot Cake - Packed full of beautiful healthy ingredients.

Ingredients
Cake
 3 eggs
 1/4 cup coconut yoghurt
 1/2 cup honey
 2 tsp vanilla
 1/4 cup ghee
 1 cup carrots peeled and grated
 1 cup almond meal
 2 tsp Changing Habits Cinnamon
 1/2 tsp Changing Habits Nutmeg
 1 tsp Changing Habits Ginger Powder
 1/2 cup chopped pecans
 pinch Changing Habits Seaweed Salt
 1/2 cup chopped Changing Habits Dates
 1 tsp baking powder
Icing
 1 & 1/2 cups shredded coconut
 3/4 cup coconut cream
 2 tbsp coconut oil
 1/4 cup honey
 4 tsp vanilla essence
 4 tbsp coconut yoghurt
Directions

Preheat oven to 180 degrees Celsius.

Combine the eggs, coconut yoghurt, honey, vanilla and ghee in a bowl. Mix well.

Stir through the rest of the ingredients.

Transfer the mixture into a lined loaf tin.

Bake for 30-35 minutes or until cooked through. Remove to cool.

Icing

Combine all icing ingredients in a food processor and blitz on high for approximately 3 minutes or until smooth.

Assembly

Once the cake has cooled, ice the cake with a generous layer of icing.

Store in the fridge.
