Choc Cinnamon Coconut Gummie Bites

These little gelatin bites seem like a dessert but they do make a wonderful snack as they provide quality fats and proteins from the coconut and gelatin contained.

 1 can organic coconut cream
 3 tbsp Changing Habits Gelatin
 5 tbsp filtered water
 1 tbsp coconut oil
 1 tbsp Changing Habits Cinnamon
 6-8 Changing Habits Cacao Melts or 2-3 tsp Changing Habits Cacao Powder
 A small pinch of Changing Habits Seaweed Salt
 stevia, pure maple syrup or honey to taste

Mix the gelatin and water together in a small bowl and combine. Set aside to ‘bloom’ and thicken (will only take several minutes).

Once thickened, add to a small saucepan with the cacao melts and coconut oil and allow to melt and dissolve on low-medium heat. Stir through to combine.

Once dissolved, add all ingredients to a quality blender or thermomix and blitz to combine.

Taste the mixture and adjust if needed.

Pour the mixture carefully into small moulds or a slightly easier method is to line a container with baking paper and pour into it.

Place in the fridge to set.

Once set, pop out of the moulds (if you’re having trouble, place in the freezer for 10 minutes to make it slightly harder with makes it easier to pop out of the moulds) or if you’ve used the container method, take it out and slice into squares.

Store in the fridge in an airtight container or glass jar.
