Pad Thai Salad

Raw food is in. Next month we'll be talking about diabetes, the raw food diet and how it is helping many people with both type 1 and type 2 diabetes. But for now here is a raw food Pad Thai salad to try.

 2 zucchinis, sliced into strips with a vegetable peeler
 2 cups of washed bean sprouts
 3/4 cup chopped nuts
 1 small red pepper, sliced into thin strips
 1 small yellow pepper, sliced into thin strips
 4 spring onions chopped finely
 1 small mild chilli, deseeded and finely sliced
 1/2 cup or more if desired of fresh chopped coriander
Dressing
 Juice from one lime
 1 tbsp Changing Habits Inca Inchi Oil
 1/4 - 1/2 tsp Changing Habits Seaweed Salt
 1/4 cup coconut milk
 1 tsp Changing Habits Rapadura Sugar</a
 1 tbsp fish sauce

Combine the dressing ingredients in a glass jar with lid and shake until combined.

Prepare all salad ingredients and toss in a salad bowl.

Pour dressing over salad and coat well.

Serve for lunch or as an accompaniment to a main meal
