Slow Cooked Pork Burrito Bowl

A healthy, fresh combination of Mexican inspired ingredients. Add a little fresh chilli or chilli powder for an extra kick!

Ingredients
Slow Cooked Pork
 Changing Habits Seaweed Salt
 cracked Changing Habits Pepper to taste
 1 kg pork shoulder
 1 cup freshly squeezed orange juice
 1 lime zest and juice
 2 tsp Changing Habits Cumin Powder
 2 tsp fresh oregano
 4 cloves garlic chopped
 1 tsp Changing Habits Curry Powder
Turmeric rice
 1 cup rice
 3 cups water
 2 tsp Changing Habits Turmeric
 cracked Changing Habits Pepper to taste
Roasted Capsicum dip
 2 red capsicum sliced
 Changing Habits Seaweed Salt to taste
 Changing Habits Pepper to taste
 1/3 cup sour cream
Guacamole
 2 avocado
 1/4 cup sour cream
 juice of 1 lime
 Changing Habits Seaweed Salt to taste
 Changing Habits Pepper to taste
Salsa
 2 tomato diced
 1/2 small cucumber diced
 1/4 spanish onion diced
Salad
 1/4 red cabbage diced
 cos lettuce shredded
Garnish
 lime wedges
 fresh chilli (optional)
 coriander chopped (optional)
Directions
Slow cooked pork

Season the pork with salt and pepper. Place in a slow cooker with the rest of the pork ingredients and cook on low for 8 hours.

Pull the pork apart with a fork, and let sit for a further hour in the juices. Drain and set aside.

Turmeric rice

Cook the rice in water with turmeric and cracked pepper until soft. Drain and set aside.

Capsicum dip

Preheat oven to 180 degrees celsius.

Place the sliced capsicum on a lined baking dish and season with salt and pepper. Roast for 40 minutes.

Transfer the capsicum and sour cream to a food processor or Thermomix. Blitz until smooth. Set aside.

Guacamole

Place all guacamole ingredients into a food processor and blitz until smooth. Set aside.

Salsa

Place all salsa ingredients into a small bowl and combine. Set aside.

Salad

Shred the lettuce and cabbage. Set aside.

Assembly

In 4 bowls, transfer the rice as a base, arrange the rest of the ingredients in sections (like pictured).

Top with optional garnishes.
