Spicy Beef and Pumpkin Curry

Massaman Curry (gaeng matsaman) is a Southern Thai curry which has a lot of Indian influence.

 2-3 tbsp massaman curry paste
 1/2 red onion finely chopped
 500g organic beef strips
 200g pumpkin sliced thinly or chopped into cubes
 1/2 cup organic coconut milk
 150g green beans cut into pieces
 1 tbsp fish sauce
 1/4 cup crushed cashew nuts
 6 kaffir lime leaves shredded finely

Heat wok or heavy based pan till hot.

Fry Massaman paste for 1-2 minutes.

Add beef strips and onion and stir until coated.

Add pumpkin, coconut milk, beans and fish sauce simmer for 10 minutes.

Add cashews and lime leaves, stir through. Taste the mixture and see it if need any additional seasoning.

Serve with cooked quinoa, rice, buckwheat or amaranth.
